Organic Strawberry Like Corbezzolo Sardinian Arbutus

Organic Strawberry Like Corbezzolo Sardinian Arbutus

Corbezzolo honey, from the tiny farm of Roberto and Anna De Col Pirasin Sardinia, is made only with the honey accumulated from the flowers of the Mediterranean arbutus, or strawberry tree. This bushy tree grows wild all around the southern Italian and Sardinian coasts. The spiky red fruit is most oftentimes applied for jam. The bitter honey produced by the bees that feast on the flower is perfective for sharp blue cheeses.

1Old honey?
By Bonne L. Holbrook
I ordered this honey so that I could make some of the recipes in a Sardinian cookbook….unfortunately the honey arrived badly crystalized. I’ll see if I may melt it to reliquify, but my cookbook (and various others) states that Sardinian Bitter Honey is one of the honeys SLOWEST to crystalize….so, I’m thinking sales are slow and quality assurance poor. On the plus side, it did arrive in a timely manner. Personally, I won’t buy again from this company.
